I try to always make one big "soup of the week" for meal planning throughout Winter and Autumn. This week it was my favourite irish pub soup, which contains an array of hearty root vegetables, which nourishes the body through a cold spell. It also brings back wonderful memories of Ireland, sitting down at a little round table with a bowl of hearty soup and thick cut brown bread to the side.
This christmas we aimed to keep it simple, using what we already had, and making the most of nature and what was growing in our garden. Making gifts became important and catching up with people was extra special.
Whatever it is, the summer vegetables have been struggling and the pests have been thriving. If “one must maintain a little bit of summer, even in the middle of winter,” as Henry David Thoreau puts it, then we might be out of luck (...)
